So don't try it on, my poor misguided boy, or else--" (pg. 133)Simon is talking with the pig's head. It shows how Simon is losing his mind.
The Pig's Head

"You knew, didn’t you? I’m part of you? Close, close, close! I’m the reason why it’s a no go? Why things are what they are? (pg. 133) This is when Simon realizes that the beast is not real and it only exists in their immagination.
"This head is for the beast. It's a gift" (pg. 127) The boys sacrifice the head to the beast
The pig's head symbolizes evil within the boys on the island. It represents the demons that the boys have inside. The pig's head basically wants the boys to separate from their civilization life and become savages. Although the pig's head is dead, it talks to Simon and eventually the boys end up killing him due to the demons inside of them.
