Ingredients (serves 4) 400g finely mince1 medium onion, finely diced1 egg, beaten1/2 c fresh breadcrumbs2 t milk1/4 t pepper (pinch)1/4 c plain flour2 t oil200g can chopped tomatoes2 t tomato sauce2 t parsley1/2 c baby spinach 400g spaghetti1/4 c grated Parmesan cheese

1, combine mince,onion,egg,breadcrumb,milk and pepper in a large bowel.2, form a mixture into small balls (slightly smaller than a golf ball) and roll in flour.2, heat oil in a large frypan and cook meatballs I a small batchs until browned all over.drain on absorbent paper.4, in a pan, combine tomatoes, sauce and parsley over low heat, add meatballs and simmer for 10-15 min, turning occasionally.5, bring a large saucepan of water to boil and add pasta when boiling.cook pasta as per packet direction (usually approx. 8-12 min). Drain.6, place pasta with sauce in a bowl and sprinkle with parmensen cheese.7, the spinach goes in the sauce.
