Preheat oven to 425F. Chop choice of vegetables (carrots, kohlrabi, winter squash, turnips, potatoes, cabbage, cauliflower, etc). Add some onion, garlic, salt, pepper, olive oil & the juice of half a lemon. Add herbs like rosemary &/or thyme, stir. Place in oven. Stir every 20 minutes or so until veggies are cooked through. Great topped with shredded parmesan!

Vegetables are chock full of nutrients. The best way to get the most nutrients out of veggies is to....*Buy in season*Know how to best store them (dry or cool)*Process each veggie correctly (raw, steamed, sauteed)
