Lemon Meringue Cupcakes

Ingredients1 cup cream1 cup sugar2 eggs, lightly beaten1 1/2 cups all purpose flour Finely grated rind of 1 lemonLemon curd1/2 cup lemon juice1/2 cup butter1/2 cup sugar1 egg3 egg yolksMeringue3 egg whites1/2 cup sugar

DirectionsPreheat oven to 350. Line one (12) muffin pan.1. Combine cream, sugar and eggs in a large bowl and whisk. Gradually add flour and zest and mix until mixture is thick and smooth.2. Fill tins and bake for 15-20 minutes. Cool3. For lemon curd, heat lemon juice and butter in a small saucepan and simmer until butter has melted. Add sugar, egg and yolks. Cook, whisking continuously until mixture becomes thick and glossy. Cool.4. For meringue, beat egg whites in an electric mixer until firm peaks form, gradually add sugar, beatuntil sugar has dissolved between each addition. Spoon meringue mixture into a piping bag.5. Cut a small hole in the top of each cupcake and fill with 1-2 teaspoons of lemon curd. Pipe a swirl of meringue mixture on the top of each cupcake and place under heat of oven for 60-90 seconds or until golden.
