Pan-fried hake, white bean & chorizo Ingredients: 450g dried white beans, such as haricot or cannellini, soaked overnight in water; 4 garlic cloves, 3 left whole, 1 crushed; 2 bay leaves; 1 tsp thyme leaf, chopped, plus extra to serve; 6 tbsp olive oil; 100g good white bread, diced; 100g cooking chorizo, skinned and chopped into small chunks; 1 onion, sliced; 3 tsp paprika; 1l chicken stock; small handful parsley, chopped; 6 hake fillets, about 125g/5oz each How to do it: Drain the beans, then tip into a large pan with 2 litres of water. Simmer with the whole garlic cloves, bay leaves and thyme for 30 mins or until cooked and tender. Remove from the heat and set aside. Meanwhile, heat 2 tablespoons oil in a frying pan. Fry the bread with the remaining garlic clove. When golden and crisp, scoop out and drain on kitchen paper. Add the chorizo to the pan, fry until crisp, tip out and keep warm with the bread. Add another 2 tablespoons oil and the onion to the pan, and cook for 5 mins until softened. Stir in the paprika. Drain the beans and add to the onions with the chicken stock and 2 tsp salt. Cook for 5-10 mins. Stir through the parsley and keep warm.Season the hake and heat the remaining 2 tablespoons oil in the frying pan. Put the hake, skin-side down, in the pan and cook for 3-5 mins over a mediumhigh heat to crisp up the skin. Flip the fish over and cook for a further 3-5 mins until cooked through. Spoon the white bean mix into bowls, place the hake on top and finish with the fried bread, chorizo and a little more thyme.

Tortilla de patatasIngredients: 1 Kg potatoes; 5 eggs; onions; saltHow to do it: Put some olive oil in a frying pan, add chopped potatoes, chopped onios and salt. Fry everything together on both sides until golden brown. Then, remove the oil from the potatoes, beat the eggs well, mix all together and put it on the frying pan till it is golden brown.

Sea food ingredientes: prawns, clams, squid, mussels, herbs, peppers,rice.We fill the pan with water and put it to boil.We then wash the prawns and add them to the water.Then we add chopped squid,mussels,then we add herbs and a pepper and once boiled,add salt to taste.We add the rice.

Macaroni with sausage sauce Ingredients: 1 pound macaroni, (ziti or rigatoni); 1 pound sweet Italian pork sausage; 1/2 pound crushed ripe tomatoes; 1 medium onion; 2 cloves garlic; 1/4 cup red wine; 1/2 cup peas; 1/4 cup extra virgin olive oil; sea salt; freshly ground black pepperHow to do itEvenly chop the onions. Remove the sausage from its casing and crumble into pieces. Heat the olive oil in a large saucepan over moderate heat and add the chopped onions and garlic and cook until the onions become translucent, then add the crumbled sausage and cook until it is lightly browned. Turn down the heat to low, pour in the red wine and reduce by 3/4, then add the tomatoes, cover and simmer. Add the peas, remove the sauce from the burner and set aside. Bring a large pot of salted water to boil and add the pasta.When the pasta is al dente, strain and immediately toss in the pan with the sauce. Return the pan to the burner and, over moderate heat, stir together the pasta and sauce until evenly combined and hot.Serve with grated pecorino cheese.
