Celiac disease is an autoimmune disease characterized by an extreme allergy to gluten. Gluten is a protein found in wheat, rye and barley and causes significant damage to the small intestine of someone with Celiac Disease. This reaction in the small intestine can destroy the villi, finger-like projections in the intestine that promote nutrient absorption.
The only effective treatment for Celiac Disease is to maintain a completely gluten free diet. This means no pasta, bread, most cereals, donuts, cookies and even soy sauce (which has wheat in it, the sneaky booger). Any food with barley, wheat or rye is out the window. Fortunately, the food industry is stepping up its game and providing a lot of gluten free alternatives in both grocery stores and restaurants. It may seem extreme, but a strict diet of gluten free food is what is needed to maintain a healthy body for someone with Celiac Disease.

What is it?
Celiac disease is a genetic disease and is most commonly found in those who have a relative with the disorder. Many people with Celiac Disease have had a traumatic experience in regards to their small intestine, such as a foreign parasite, or an extreme stomach virus. Traumatic, and stressful emotional experiences have been known to trigger the disease.
