HistoryHollandaise was orginally caleed a "Sauce Isigny" after Normandy, France. In the 17th Century it was more of a Dutch sauce that was thickened with eggs.

DerivativesThe most common derivative from a hollandaise is a Bearnaise. There is also Sauce Dijo, Sauce creme fleurette, and sauce Noisette.
